Olive Picking Ypsi style
Olives for eating: Everyone has their own method - hit the green olives with a rock and open them then soak in salt and water - changing the water every day until the bitterness is gone. If you use a knife to open the olives they will take on a red color - it's the iron in the metal blade.
Olives are then put into a sealed container with a brine - this is where you experiment according to taste - salt, vinegar, water, lemon, herbs. Make sure the brine fully covers the olives or they will mold!
