Olive Picking Ypsi style
Bring on the beautiful days of Winter which really feel like Spring! Olive Picking Ypsi style is a :36 second short promo highlighting what most of the locals are doing now in the fields - picking olives! Please note, these olives were picked in December and harvested for eating. The black olives being harvested now are for olive oil press production as well as eating. We don't have to tell you some of the best olive oil in the world comes from Lesvos!
Olives for eating: Everyone has their own method - hit the green olives with a rock and open them then soak in salt and water - changing the water every day until the bitterness is gone. If you use a knife to open the olives they will take on a red color - it's the iron in the metal blade.
Olives are then put into a sealed container with a brine - this is where you experiment according to taste - salt, vinegar, water, lemon, herbs. Make sure the brine fully covers the olives or they will mold!
